Ingredients

  • 2 chicken carcasses, roasted or raw, plus giblets
  • 1 red onion, peeled and halved
  • 2 medium carrots, peeled

Method

Put all the ingredients, except the sea salt, into a large saucepan, cover with 2.3-5 litres (4.¼-5.¼ pints) cold water, and bring to the boil, skimming off the scum as it comes to the surface. Lower the heat and simmer very gently for 1.½ hours.

Strain, season with salt, and leave to cool. If not using immediately keep in a refrigerator for up to two days.
