  • 900 g (2 lb) spinach, washed and tough stalks removed
  • 3 tablespoons extra virgi

Method

Heat the oil in a large saucepan with a lid. Put the wet spinach into the oil, season with salt and pepper, stir once and cover tightly with the lid for about a minute. Squeeze over the lemon juice and serve.
