The Argenteuil region outside Paris is famous for its asparagus. This pancake dish is one that I remember from my days at The Normandie (see Endive). I remember what a luscious dish I thought it was, and the combination of flavours – ham, asparagus, eggs – is a perfect one. If ever there were any pancakes left over at the end of service, I would secrete them in the pocket of my coat, whip them home and make my own hollandaise to go with them. Three délices mak
