This dish evolved by accident. Years ago I used to be a regular at Ikeda, a Japanese restaurant in London. A favourite dish was Nasu dengaku – aubergine grilled with miso paste and sesame. Recently I had some leftover peanut sauce, an uncooked dressing that is served with a cold Chinese chicken salad called Bang Bang Chicken, and some aubergine that needed using.
