Ingredients: 2 tbsp olive oil; 1 tbsp oriental fish sauce, such as nam pla (optional); ½ tsp sugar; 8 sprigs of mint, leaves only, coarsely chopped; a bunch of coriander, leaves only, coarsely chopped; 1 red onion, peeled and finely chopped; 8 well-ripened tomatoes, skinned, deseeded and coarsely chopped; juice of 3 limes; 3 green chillies, deseeded and chopped
