To achieve the right balance for a salsa, there needs to be a good ratio of sweet/sour/hot/salt. It is very difficult to write an exact recipe as it is more like a salad than a sauce, and the ingredients build themselves up on each other. I like mine with a hefty kick of chilli, but not so much that that is all you can taste. I prefer to deseed the chillies, as this way you can use more chilli without the extra heat from the seeds.
