Ingredients: a large bunch of coriander, leaves reserved, stalks and roots finely chopped; juice of 1 lime; 2 lemon grass stalks, chopped; 1 garlic clove, peeled and chopped; 1 tin (400 ml/14 fl oz) thin coconut milk; 150 ml/¼ pint double cream; 3 tbsp oriental fish sauce, such as nam pla; 3 tbsp oriental fish sauce, such as nam pla; 600 ml/1 pint light chicken stock; 4 small red chillies, deseeded and finely chopped; 6 spring onions, trimmed and finely chopped; 5-cm/2-inch piece of fresh root ginger, unpeeled but chopped; 1 tom yum cube
