It is important that the lambs’ kidneys used in this dish are fresh (frozen ones are horrible, anyway), because you need their cladding of suet. The roasting of the kidneys can take place in its entirety on the hob, if you like, which means you don’t have to heat the oven. For the mustard dressing, use the recipe in Leeks Vinaigrette.
