Kidneys treated this way can be topped with all sorts of different butters. Favourite ones that I have used in the past have included Montpellier Butter, lime, ginger and coriander butter, mixed herb and garlic butters, red wine butter, and others made with mustard and horseradish. But my favourite of all is this anchovy one.
