Ingredients: 250 ml/8 fl oz dry white wine; 600 ml/½ pint light chicken stock; salt and pepper; 50 ml/2 fl oz white wine vinegar; 300 ml/½ pint double cream; croûtons, to serve; 110 g/4 oz butter; salt and pepper; 3 large Spanish onions, peeled and very thinly sliced
