Ingredients: 1 small bunch of mint, leaves picked and chopped; 4 tbsp olive oil; 1 small bunch of coriander, leaves picked and chopped (if your coriander has roots, include these); 1 small bunch of coriander, leaves picked and chopped (if your coriander has roots, include these); 2 large ripe tomatoes, skinned, deseeded and coarsely chopped; 1 medium red onion, peeled and finely chopped; 2 large red peppers; 2 green chillies, deseeded and chopped; ½ tsp salt
