Rowley Leigh is chef at the excellent Kensington Place in London. He is also a good chum and it was at his home that I first ate the original version of this dish. It is simplicity itself to prepare, and of all the dishes on Rowley’s menu it’s the one I never tire of – he says I never eat anything else.
