Ingredients: 350 g/12 oz pork back fat; 225 g/8 oz lean bacon in one piece, rind removed; 900 g/2 lb shoulder of pork; 10 sage leaves, finely chopped; ½ tsp ground allspice; 2 tsp herbes de Provence; 2 level tsp ground black pepper; 2 tsp salt; 225 g/8 oz pork liver; 25 g/1 oz butter; 2 small onions, peeled and finely chopped; 50 g/2 oz fresh white breadcrumbs; 1 wine glass of dry white wine; 3 tbsp brandy; 4 garlic cloves, peeled and finely chopped; 2 tbsp chopped flat-leaf parsley
