A good potato salad comes very high on my list of favourite things to eat. Equally, a bad potato salad is one of the most disgusting. As with all things that are simple to prepare, they are not thought out with enough care because of their very simplicity, and therefore become slapdash.
There are two important things to remember when making potato salad: use waxy potatoes of even size, preferably new, even more preferably Jersey Royals, and dress the potatoes while they are hot.
