This soup comes from the marvellous Greens Cook Book by Deborah Madison. It is excellent made with Jersey mids, when the price has dropped, as they give the best flavour. Do not be tempted to make this soup with maincrop (old) potatoes – it doesn’t work. The recipe mentions that water is fine for the liquid, and don’t be alarmed about the vinegar, it’s quite remarkable
