Ingredients: croûtons, to serve; a pinch of saffron threads; 150 ml/¼ pint double cream; 1 small bunch of coriander, leaves only, finely chopped; a squeeze of lemon juice; 1 tbsp basmati rice, cooked in a little chicken stock; 1 tbsp basmati rice, cooked in a little chicken stock; 450 g/1 lb smoked haddock, skin and bones removed; 300 ml/½ pint milk; 1 potato, peeled and chopped; 600 ml/1 pint light chicken stock; salt and pepper; salt and pepper; 1 heaped tbsp curry powder; 2 garlic cloves, peeled and crushed; 2 large leeks, white parts only, sliced and washed; 75 g/3 oz butter
