Unfortunately, these are not readily available, but give your local butcher a few days’ warning and I am convinced they will put them aside for you at a very favourable price. Frozen hearts work well too, as long as they are from a bird with good animal husbandry, as this will show in the flavour. In the true spirit of original yakitori, I marinate these in the classic blend of soy, mirin and sake. They are very good to serve early in the meal.
