These tofu sticks work best with a good-quality firm organic tofu. This gives both the taste of fresh tofu and the perfect little platform for a sauce to complement the delicacy of the tofu. In this recipe there are three flavour variations: a fruity seasonal miso compote, a fresh coriander (cilantro) shiso pesto, and a fiery chilli jam.
