Ingredients

  • 4 baby gem lettuces
  • 1 tbsp dark red miso
  • 100 ml (scant

Method

Remove and discard the outer layer of the lettuces and cut each one in half. Wash gently under running water and leave to dry on kitchen (paper) towel for 20 minutes, cut edge facing down.

Dissolve the red miso in the olive oil, whisking gently with a small whisk, and add the soy sauce and lemon juice. Dress the baby gem in the miso oil, ensuring the oil penetrates in between the layers
