A great little side dish with plenty of crunch.
First prepare the dressing. In a bowl or jug, combine the miso paste with the mustards and the red wine vinegar. Grate the red onion and crush the garlic, then add to the mixture with the pumpkin seed oil. Mix well and gradually add enough grapeseed oil to make a thick, smooth emulsion. Set aside.
Trim the green beans at either end, then cut in half. Steam all three beans together in a
