Once again this dish should be shared between a few people, but I can understand the desire to eat as many of these beautiful oysters as possible. The recipe can be easily increased, just buy more oysters and increase the dressing proportionately. This dish is best made with large Pacific oysters. Be careful not to overcook them, they are at their best when very firm. The sauce is also delicious on fried food and steamed fish.
