Mudcrab and Sweet Pork Salad with Green Mango

This is another Rockpool classic that is on the menu whenever mudcrab is in season. Pork and crab have a natural affinity and in this dish the pork is caramelised to add sweetness to the sourness of the green mango. In this salad all the elements play off each other to perfection.
