There are some things that I’m particular about and have been from the moment Rockpool opened. Most important was a sense of generosity and care for my customers. To me that manifests itself in the house salad that I’m a complete perfectionist about. Most people think I’m mad to give the salad to each customer who walks through the door, but I drive the staff to prepare it better and better every day. Preparation takes two hours in the morning and in the evening.
