This butter works well with all fish, especially with roasted blue-eye cod. Sea-urchin roe is available from fish markets or Japanese shops. It comes on wooden boards of about 100 g. If you can get live ones still in the shell, cut around the bottom beak with a pair of scissors, empty out the contents and remove the roe that is attached to the inside of the shell. The flesh is creamy, with a sweet sea flavour. This keeps for 2 to 3 days in the refrigerator and doesn’t freeze well at all.
