This dish is an example of how I use butter now. I prepare many dishes in this way, and they are lighter, but still full-flavoured. The sauce is more broth-like and nowhere as thick as it used to be.

Yabbies are similar to American crawfish and European écrevisses, and either could be substituted. Fresh green soybeans provide a nice nutty character to the dish. Prepare them as you would broad beans, just blanch the beans and shell.
