There is nothing as satisfying as a well-roasted chicken. A free-range chicken weighing about 2 kg will feed a family of four. Take the time to rest the chicken after it comes out of the oven. The juices can be mixed with some good olive oil, seasoned with salt and pepper, and finished off with either lemon juice or good red-wine vinegar. I like to serve this with a Green Salad, Potato Gratin and gar
