Herb and Spice Crusted Tuna with Eggplant Salad

This dish has been on the menu from the day Rockpool opened, and, along with the date tart, are the only survivors from the first day’s menu. They have endured quite simply for one reason - they are both perfect. Neither of them has changed, which cannot be said about anything else in the restaurant. I suspect that if Trish and I decided to retire, and Josephine wanted nothing to do with the restaurants, these two dishes will definitely be on the closing menu. It will certa
