Truffle mayonnaise is a delicious way of using fresh truffle peelings. The skin is quite hard but has loads of flavour. The process of crushing it softens the texture, and if you like, more truffles can be added to make the sauce even more luxurious. It is delicious with roasted and boiled meats.
