The simplest pasta is made of flour, eggs and salt, and this suits most of our requirements. All our doughs are hand-made; I find pasta made in a food-processor of inferior quality, and no-one has managed to convince me otherwise yet. The dough must not be overworked and it is imperative that it is rested for at least half an hour before continuing with the recipe. Allow 100 g of pasta per person.
