Smoked Salmon Lasagne with Eggplant Caviar

This dish was inspired by my good friend Steve Manfredi, who runs a restaurant in Ultimo. Pasta at the Restaurant Manfredi is quite simply to die for; it is the high standard that both Steve and his mother, Franca, set that has inspired me to work harder on our pasta dishes. I’ve developed and refined this dish over many years for MCA functions. It works very well even with numbers of 500 or more - we can be confident of the taste, texture and style of each plate, and that’
