Nothing is more satisfying, or as simple and wholesome, than a good tomato sauce and pasta. The only fresh tomatoes worth using are the vine-ripened varieties that are prolific during summer. When good, ripe, fresh tomatoes are unavailable canned ones are a very good substitute. Unfortunately for Australia’s balance of payments, the best-quality canned tomatoes seem to be Italian plum tomatoes.
