This is a free-form lasagne that’s like a pasta salad. Not only is it not really a lasagne, but the dressing has Indian influences. Its blend of texture and flavour works well and the dish is representative of the way I cook, and a direct result of my multicultural surroundings. The two main ingredients of this dish are available in Sydney over summer.
