Fine Apple Tart

This dessert was the first on the menu at Barrenjoey House when I took over the kitchen in January 1983. The year before I had worked with Jenny Ferguson at You and Me. I like Jenny’s food a lot, it’s very feminine and each dish is very important in the whole scheme of things. She also displays a real sense of generosity to her clients from start to finish. This involves going to the markets and getting the best produce, building up a terrific wine list, and working with th
