Frozen Espresso Cake

This is one of the great ice-cream cake tastes, developed back in 1985 at Perry’s. I subsequently took it to the Bluewater Grill and Leo Schofield fell In love with it, as did everyone who tasted it.

Barry McDonald was starting to bring up King Island dairy cheeses and creams back in 1985, before he turned his hand to fruit and vegetable providoring in 1986 with the opening of the Bluewater Grill. He was in the kitchen, telling me about the crème fraîche that was co
