Rainbow Sugar

This coloured sugar is fun to make, and a great activity for children. Pink sugar looks like crumbled crystallised rose petals, and red sugar mixed with poppy seeds gives a very dramatic finish to truffles. You can also roll Marshmallows in it, or use it to decorate Floral Cream Fondants. Try experimenting with pure colour and no alcohol for a vivid effect.
