Robert Mantho, an American friend often mistaken for Robert de Niro, makes a mean key lime pie with tiny limes from Miami. This is my homage to the American classic. You can make a simpler crushed biscuit base, which my daughter Millie prefers, by mixing 300g of crushed digestive biscuits with 80g of melted butter and pressing the mixture into the base of the tin. The filling is a silky curd made with white chocolate; a perfect contrast to the sharp limes.
