Ideal for a large summer party such as Fourth of July, moist and flavorful whole poached salmon makes a stunning presentation. Although a little time-consuming, it is well worth the effort because the results are so elegant and delicious, it feeds many people and it requires no last-minute preparation. A smaller salmon is easy to do in a roasting pan, a larger requires a long fish poacher unless you sacrifice the head or cook it separately.
