Heat the olive oil in a flameproof casserole dish. Add the veal fillet and brown over high heat until it is well caramelised. Cover and allow to cook for 10 minutes on low heat, adding a little white wine from time to time. Add the shallots and garlic, then cook for a further 10 minutes.
Add the carrot, potato, swede, bay leaves and thyme and combine well. Add the rest of the white wine
