  • 3 large pigeons*
  • 150 g ( oz) butter

Method

Heat the butter, 50 g ( oz) for each pigeon, in a large flameproof casserole dish. Brown the pigeons one at a time over high heat until well caramelised.

Set the pigeons aside and in the sa
