The day before, slice the cod fillet open lengthways, then roll it into a sausage shape.

Combine well the orange zest and juice, coriander and tarragon mustard.

Spread the mixture over the rolled cod and wrap it tightly in plastic wrap to make an even shape. Put in the refrigerator for 24 hours.
