  • 1 side of salmon, skinned and pin-boned
  • 2 French shallots, peeled and chopped

Method

Cut the fillet into three pieces. Put the two fleshier pieces aside and dice the tail end into small cubes.

Preheat the oven to 180°C (350°F/gas 4).
