  • 1 leg of lamb
  • 1 bulb garlic
  • 1 thyme sprig

Method

Prepare the lamb leg using one of the following three methods:

  1. the day before, stud the leg with the garlic cloves and rub the leg with olive oil. Break the thyme and rosemary into smaller pieces and scatter over the leg. Wrap the lamb in plastic wrap and keep in the refrigerator.
  2. Finely chop 3 garlic cloves. Combine the garlic, chopped thyme and rosema
