  • 2 racks of lamb with 6 ribs each
  • 2 bunches mint, chopped

Method

The day before, combine mint and garlic and mix with 1 tablespoon of honey. Spread the racks generously with the honey mint, wrap them in plastic wrap and put in the refrigerator for 24 hours.

The next day, cook the potato in a large pot of boiling salted water for 30 minutes. Add the cream to the potato and pureé with a handheld blender. Add the remaining honey, season with salt and pe
