The inspiration to use leeks, one of my favourite vegetables, and create this recipe came from tareh, a green vegetable with a leek-like onion and garlic flavour. Although leeks are not frequently used in Parsi cooking, many vegetarian dishes include leelu lasun, a member of the same family. Green garlic, like tareh, is a seasonal vegetable from the allium family. The Persians prefer tareh, which is widely grown locally, and many other types of greens known as su
