With all its delights, Parsi cuisine features the famous kuchumber as a side dish. I created this recipe to respect this humble basic dish, added avocado and have named it salsa crudo, pronounced croo-dah and meaning uncooked, due to the addition of ingredients. It's delicious. You may prepare the matho (hung yoghurt) or buy 3 cups of labneh. Either way it must be thick.
