Pie dough can be made in a stand mixer, but if you need enough for only one or two pies, it’s faster to mix it by hand. I believe that pastry dough prepared in a food processor results in a tough rather than delicate crust.

The dough can be wrapped in plastic wrap/cling film and stored in the refrigerator for up to 24 hours, or in the freezer for up to 1 month. If frozen, thaw in the refrigerator before using.
