The key here is to cook the alcohol out of the wine so it doesn’t denature the exterior of the meat. Use this marinade for grilled chicken or for the Sautéed Chicken Breasts with Tarragon Butter. Marinate the chicken for 6 to 8 hours, fish for 2 to 4 hours. If the chicken must be marinated longer, halve the amount of salt.
