Even the Tsarina, Empress of All Russia, seems too lowly an eponym for this exquisite dessert. So divine is its flavor that some people call it pishcha bogov, “food of the gods.” A perfect ending to a rich meal.

Soak the gelatin in the ¼ cup of water, then heat gently until the gelatin dissolves.
