Milk pies, baked for Christmas and New Year in big, round copper pans called tapsia are a specialty of the shepherding communities of the Peloponnese region of southern Greece. The filling is made with the first creamy milkings of the new season and never includes eggs, though city dwellers are known to do so. You can use phyllo instead—you’ll need about 20 sheets.
