This is a Scots version of the great British Christmas pudding as given by Lady Clark of Tillipronie in Aberdeenshire, in the sixteen-volume household manual she compiled between 1839 and 1900. Intended as a cloutie dumpling, it is boiled in a well-floured cloth suspended on a wooden spoon placed across the mouth of the cooking cauldron, although the mixture can be steamed in a pudding bowl if you prefer the modern way.
